Blackberry Victoria Sandwich

I am hoping you have already read my article on planning a family picnic. if not then you must read it here. Whether you are having a small picnic in your garden or firing up the barbecue or heading off to your favourite picnic spot, there is nothing like a homemade cake. I have taken up a victorian classic and given it a twist by adding grilled blackberry’s and cream cheese. Do feel free to add your favourite fruit. Traditionally this is made by sandwiching jam and whipped double cream between two victorian sponges.I prefer making it a night before and let the flavour develop and the sponge moisten by absorbing the moisture from the filling.

Blackberry Victoria Sandwich: This classic light and fluffy sponge is given a makeover with indulgent blackberry and cream cheese filling. This is one of the most simple and quick recipe of a cake that I have made.This is one addictive recipe.

Blackberry Victoria Sandwich: This classic light and fluffy sponge is given a makeover with indulgent blackberry and cream cheese filling. This is one of the most simple and quick recipe of a cake that I have made.
Ingredients
  • 175 g unsalted butter,at room temperature
  • 175 g caster sugar
  • 175 g self-raising flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 3 medium eggs, preferably free range
  • For the filling
  • 200g blackberries
  • 4 tbsp castor sugar plus extra for dusting
  • 250gm Creamy Soft cheese,I used Philadelphia
Instructions
  1. Preheat the oven to 180C or gas mark 4. Grease and base line 2*18 cm sandwich tins with parchment paper. Put the butter,sugar,vanilla,eggs,flour and baking powder in a bowl and beat it with an electric which at low speed for 2-3 minutes until all the ingredients are combined into a smooth and creamy batter. Caution do not overdo the mixing process.
  2. Divide the mixture between the tines and level the surface with a spatula. Bake for 25 minutes or until just firm to touch. Transfer to a wire rack to cool.
  3. To make the filling,line a baking tray with parchment paper and scatter with the blackberry’s tossed in a 2 tablespoons of sugar. and bake for 10 minutes, or until tender. Leave to cool.
  4. Which the cream cheese in a bowl with he remaining sugar until thickened. Spread the cream cheese over one of the cakes (bulging side up),arrange the cooled blackberries on top. Place the second cake on top and lightly dust with actor sugar to serve.
