Blessing in disguise | Blueberry Cheese Cake !!

Once in a while we all fall in love. At least if not love but we do have infatuations and crushes.Well I did too but it’s too complicated to explain on this public post.This foodie venture came into my life when I was just trying the decipher the word love.This Mr.X someone was a very good friend of mine and I actually took offbeat classes from him to understand my technical difficulties in work.

I spent my working days staying in a woman’s hostel where to God’s grace I had the best set of friends in my life.Who stood through my thick and thin and we enjoyed the most during those days.(Alas how i miss those carefree days!!).

This Mr.X used to like visiting temples and every Sunday evening he would invite me to this spiritual soiree.I would be more than glad to embark on this but in secrecy.Why the secrecy well……… girls can be bullies too.Given a hint that I was out with a guy would spark a good rumor and I would invite a good teasing session for months.Every Sunday this white lie or rather a subtle lie that I was going to the temple was partially true.Every spiritual date would end with a bite of my favorite blueberry cheese cake in my most favorite german bakery.

On that note lets cook!! You will eventually understand why its a blessing in disguise 🙂

 Ingredients for Blueberry cheesecake:

  • 2 cups of fresh blueberry
  • 1 tbsp lemon juice
  • 1/2 cup of castor sugar
  • 10-12 Digestive biscuits
  • 7 tbsp unsalted butter melted
  • 250 g mascarpone cheese
  • 250 ml Crème fraîche
  • 3 tbsp icing sugar
  • Loosed based cake tin (greased and lined with butter paper)

Preparation method

  1. Simmer the blueberries with lemon juice and castor sugar for 5 minutes.Crush the blue berries to make a thick syrup.Set it aside to cool.
  2. The crumb base is done by crushing the biscuits in your blender and then in a mixing bowl it is mixed with meted butter.Then we press the crumb mix to the prepared cake tin with the help of spatula.
  3. In a mixing bowl use a whisker to mix the mascarpone cheese and Crème fraîche until smooth and gently sift in the icing sugar (add more sugar if you have a sweet tooth like me).
  4. Now spoon the cheese mix over the crumb base and level it with a spatula.
  5. Then spoon the blueberry syrup over the cheese and crumb base.
  6. Chill in the refrigerator for overnight or minimum 5 hours.As this is a very delicate cheese cake and its one slice could be quite heavy on your palette but light on your heart.Wishing everybody a cupid’s stroke of luck with my blueberry cheese cake.

P.S => Well that Mr.X finally ended becoming my husband and my hostel friends my dearest pals till date.I visit my love ground once a year and never forget to romance the blueberry cheese cake.
