Breakfast in bed | Amaranth + Samo + Ricotta Pancakes

Lilies AmaranthSamoRicottaPancakesAmaranth Samo Rice & Ricotta Pancakes THE BED                                       By Roy

This was where I was laid by my mum,

Sweet nothings whispered and a faint hum,

Huddled in the blanket in the winter sun,

Thousands of pillow fights for some fun,

There came a time when I threw tantrums,

An outright no, blatant answers and loads of show.

I ailed few years on the soaked bed,

Crushed on the Dunlop when I was muck-head,

I would mug up my answers and slid into nightmares,

Thinking of scores and bleak future,

I soiled the sheets with my tears each time my friend gave me a sneer,

That was the age when I was high on teenage things

And all good things which rhyme with flings.

The bed grows as you grow, it’s not a single anymore,

Sleeping languorous with the arms around,

Sometimes it hurts just to move on the ground.

There could be a time when we slept on edges,

And a hangover way too much to remove one’s wedges.

Life has come one full circle, countries have changed,

But not the warmth, comfort and support of the beloved bed,

As I laid her on the same cradle as the moonlight shines on her instead.

Its empathy grows on you. There are several reasons for which we could ourselves feel indebted to this holy mass of comfort.

My friend left last week and I ended up having a terrible bout of cough and cold. I spent nights coughing up phlegm and the hoarseness wakened up many an innocent souls. I spent my time ailing on it and that instigated me think about the unconditional support this fluffy mass has provided me all my life. I was tended by my hubby with cloves or ginger nibble to soothe my throat. The cooking was taken over by him and I was treated to some food from his kitchen. Heuristic kitchen got a rest for a while. But I wanted to get back to blogging and couldn’t think of something creative. I roped him to prepare some pancakes (Poor fella jogged at 7 for some ricotta). All the shots are also from ‘his’ only. And I must say I am impressed. I do take credit for the creative direction. 🙂

Amaranth Samo Rice & Ricotta Pancakes

A breakfast in bed is a very glamorous concept prevalent in the west. My memories of food date me back to the winter months when we sat huddled in our quilts while watching the friday night flick. It was more of a dinner in bed which was a cute waiver given my mom owning to the immense cold months. With this shoot I was tried to purport the realism of a breakfast in bed. But remember this a shoot to mimic this in real life you have to ensure that nosy toddler of yours is deep down in heavy sleep.

Amaranth Samo Rice & Ricotta PancakesAmaranth Samo & Ricotta PancakesAmaranth Samo Rice & Ricotta PancakesThis the fasting season so I have picked up gluten-free ingredients like Amaranth and Samo rice. The addition of Ricotta makes them extremely moist. They are best eaten when hot with a dash of beaten curd and garnished with some freshly chopped coriander. Recipe below for Amaranth,Samo rice and ricotta pancakes. These are savoury pancakes.

As for the photography, the idea was to capture the virgin morning blue grey autumn light. I will take no credit for styling this is inspired from the most creative and excellent naturalistic food photographer and writer Beth kirby.Reading from my favourite chef Ismail Merchant’s book Passionate meals helps me plan my menu for the day. The quilts is a Tommy hilfiger limited edition and I love to cuddle into it during autumn.

  3. Roll them into circular pancakes having thickness of a 2 pound coin.
  4. Then heat a pan and add 1 tsp oil.
  5. Then place the pancake in the centre and pan fry them on both sides.
  6. I would advise to cover the pan for 2 minutes while cooking to ensure the flours are evenly cooked.
  7. Apply oil on both sides while frying.
  8. Then serve them with freshly chopped coriander and whipped yoghurt for an extremely light and healthy breakfast. This would give the sweet and sour pancakes a healthy competition.
