This recipe belongs to my mother. She made various forms of stuffed veggies, stuffed bitter gourd was my favourite as it’s quite detailed hence I have added it to the blog. What I liked about her fillings was she used the core in the filling along with other spices. It would make filling so flavoursome and would leave you craving for more. Combined well with roti or hot rice. The Maharashtrian way of doing stuffed green peppers is here.

Stuffed green peppers: This quick stuffed pepper recipe supper that won’t leave you feeling stuffed 🙂 but rather tantalise your taste buds.
Ingredients
  • 5-6 Plump Green Chilli or peppers, Cleaned and deseeded.
  • The variety I have used are not the spicy ones.
  • 1/2 cup gram flour
  • 1 tsp turmeric powder
  • 1 large onion finely chopped
  • 1 tsp dry mango powder
  • 1 tsp red chilli powder
  • 1 tsp cumin seeds
  • 1 tsp carom seeds
  • salt to taste
  • Oil for frying
  • Fresh spring of coriander leaves, finely chopped
Instructions
  1. Clean wash the green pepper. Then carefully make a slit through one end to the other. I have deseeded the pepper to provide more space for the filling. These were the non spicy ones so I could use a slit knife and discard them other you could use a glove and with the help of fingers scoop them out.Apply a little bit of salt in the inner core of the peppers.Set aside.
  2. In a flat skillet dry roast the gram flour until it releases a nutty flavour.Then set it aside. to cool.
  3. In a small pan heat 1 tsp oil and splutter the cumin and carrot seeds. Fry your onions until translucent. Then add your turmeric powder and all the dry spices.Give it a quick stir and remove from heat.
  4. Now mix the above onion-spice mixture into the roasted gram flour and give it a quick rub to even mix it.Add some fresh coriander and the filling is ready.
  5. Then carefully open the slit green peppers and spoon the mixture into the pepper cavity. You do not need to over stuff them just enough to give it a good tug.
  6. Then 1 tbsp oil in a flat bottommed pan , the shallow fry these stuffed green peppers on each side for 2-3 minutes. I slightly charr them on one side to give its smoky flavour. But this step is completely optional. I do not cover my pepper while shallow frying and keep the heat medium to low to ensuring slow cooking. I think covering them makes them wilt.
  7. Then serve them hot as a side dish or eat it with bread or roti.
